Jenny's Chocolate Chip Cookie Recipe

There’s nothing better to get you in a good mood than chocolate chip cookies! I try to squeeze them in to any scene I can when I’m writing—especially in those super festive Christmas baking scenes. So today I’m sharing my favorite chocolate chip recipe with you! Here you go!

Ingredients:

3/4 cup rolled oats

1 cup whole wheat flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup (1/2 a stick) butter (softened)

1/4 cup warmed, liquified coconut oil

1/3 cup brown cane sugar (turbinado)

1/3 cup brown sugar

1 egg

1 teaspoon vanilla

1 cup chocolate chips

Directions:

Preheat the oven to 350 degrees F.

Coat 2 cookie sheets with butter.

In a food processor, grind the oats and put them into a bowl.

To that bowl, add flour, baking soda, and salt.

In a second bowl, beat the butter until fluffy.

To the butter, add oil, both sugars, egg, and vanilla. Beat until smooth and creamy.

With the mixer running, add dry ingredients.

Beat on low until just combined.

Stir in chocolate chips.

Make balls of dough and place 1 inch apart on cookie sheets.

Bake one sheet at a time for 15 minutes.

(You can make this ahead: store in an airtight container 3 days in the refrigerator or 2 months in the freezer.)
