Beachy Avocado Dip
Summertime brings to mind long days spent in the sunshine, warm cheeks, and tired eyes at the end of the night. It’s a time of simplicity and togetherness. I’ve got a healthy dip that even the most exhausted beach-goer can produce at the end of the day before curling up on the porch with a good book. With only 5 ingredients, it’s super easy and delicious.
Jenny’s Avocado Dip
1 avocado (This will make about a cereal bowl full.)
1/2 to 1 cup+ almond milk (Just add this until desired consistency. I think I used 3/4 cup & 1/2 of an avocado)
fresh cilantro (just a healthy handful or two)
salt (Any will do. I used a large pinch or two of Himalayan salt.)
juice of one lime
Put all ingredients into a food processor and puree until smooth. Garnish with a wedge of lime and a sprig of cilantro. (I also put dried parsley on the top of mine.)
